Bollinger Special Cuvee - BOXED NV Champagne - 75cl - 12% ABV

Since it first started producing in 1829, Bollinger has been a family led business. Special Cuvee is the signature of the Bollinger range, and is the objective of the greatest care and attention. It is one of the best Gandes Marques with its high quality of wines used in the blend. They are one of the few champagne houses that have their own vineyards. It is made from vines of the recent harvest, but most of the blend is made from the reserve wines from the past years. They use 85% Grands and premium crus and they have exclusive use of the cuvee First 20,5 HL of the 25,5 HL authorized yield. The base of the blend is made up of equal parts of 2 different harvests, fermented in small stainless steel vats or in old oak barrels. It is then aged in the cellar for more than twice as long as the appellation rules. It is then given 3-6 months to rest after disgorgement. The blend is made up of 60% point noir, 25% chardonnay and 15% Pinot Meunier, harvested from 30 different villages. On the eye it is golden, with a distinctive sign of the black grapes used. There is proof of maturity and very fine bubbles. On the nose it has complex aromas of ripe spicy fruits, roasted apples and peach. On the palate the bubbles are very delicate with a surprising combination of structure length and liveliness. Flavours of pear, brioche, spices and walnut jump off the tongue as it ends with a fizzy but subtle finish
